Easy-Peasy Plant-Based Split Pea Soup!


Day 2 of showing gratitude! On this #ThankfulTuesday I'm grateful for the World Food Championships sponsors and brands that contribute SO MUCH to our success! Competing costs us THOUSANDS of dollars every year and without brands like Walmart, Bolners Fiesta Products Inc. and Minor's Vegetable Base, we would get nowhere!

I've been eating as much plant-based food as I can in 2020, so today I'm sharing an easy-peasy plant-based split pea soup recipe using my Instant Pot and the three mentioned brands!

Stay home, stay healthy, stay safe and...put some pants on man!

Prep Time: 5 minutes / Cook Time: 40 minutes / Servings: 4

Ingredients:

  • 2 tbsp. olive oil

  • 1/2 cup chopped carrots

  • 1/2 cup chopped onion

  • 1/2 cup chopped celery

  • 1 cup dried split peas

  • 1 tsp. chopped fresh rosemary

  • 1/2 tsp. liquid smoke (Mesquite flavor)

  • 1/2 tsp. garlic powder

  • 1 tbsp. Minor's vegetable base with 4 cups water*

  • 1/4 tsp. black pepper

Steps:

  1. Turn the Instant Pot on Sautee and heat the olive oil. Add the carrots, onion and celery. Sautee for about 5 minutes, stirring occasionally.

  2. Add the peas, rosemary, garlic powder, liquid smoke, broth and black pepper. Stir until combined.

  3. Place and lock the top onto the Instant Pot. Reset the Instant Pot and press the "Soup" button. Allow the Instant Pot to naturally release for about 10 minutes after cooking.

*can be substituted for 4 cups vegetable broth
