It's the final regular season game for the Cardinals, and our hopes of the playoffs are diminished. The good news is that the game is on New Year's Eve, so it'll be a hell of a party and a way to go out!
Sunday will be a marathon, not a sprint. So these two dishes are easy to make and can left our for the game, put away, and then re-served for the NYE party. If there are any leftovers!
Seattle Seahawks Yellow-Bellied Chicken Dip with Soft Pretzel Bites
Place the pretzels on a cookie sheet and prepare according to package directions. Transfer to a serving dish and set aside until ready to use.
In a medium saucepan combine the cream cheese, chicken, Monterrey Jack cheese, milk, hot sauce, garlic and onion powder, salt and pepper. Stir on medium heat until dip is smooth, cheeses are melted and all ingredients are combined. Stir in the yellow food coloring (if using) and transfer to a serving bowl. Top with the blue cheese crumbles and fresh chopped chives. Plate with the warm pretzel bites and serve.
Arizona Cardinals Loaded Baked Potato Dip with Crispy Waffle Fries
1 cup shredded mild Cheddar cheese, plus 1/4 cup for garnish
1/2 cup milk
1/4 cup chopped fresh chives
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. each salt and pepper
24 oz. Signature Select (Safeway) Criss Cut Seasoned French Fried Potatoes
Place the waffle fries on a cookie sheet and heat to package directions. The longer you leave them in, the crispier they'll be!
Heat a large skillet to high heat and add the chopped bacon. Cook until browned and crispy, stirring occasionally, 7-10 minutes. Remove from drippings with a slotted spoon and transfer to a bowl that's lined with a paper towel. Set aside until ready to use.
In a medium saucepan, combine the cream cheese, sour cream, 1 cup of the Cheddar cheese, milk, garlic powder, onion powder, salt and pepper. Heat on medium heat until dip is smooth, cheeses are melted and all ingredients are combined. Stir in the bacon and chives (reserve about 2 tbsp. of each for garnish). Transfer to a large serving bowl and top with the remaining 1/4 cup Cheddar cheese, and remaining bacon and chives.
