Good Morning AZ: Back to School Breakfasts

I can't believe summer is over already! My kiddo is starting at a new school, he's grown over an inch during the break, and we're completely unprepared with clothes and supplies. Sound familiar?! Oh yeah, and I've gained about 7 lbs. SO, breakfast will be pretty important for both of us as we start the year. He needs the calories for his growing body, and I need a light start to my day, as I begin to take better care of myself with a little more time on my hands. I'm also not much of a morning person. I AM however a night owl. So, these recipes are great for night owls to prep the night before, and they're also easy to prep the morning of. And remember...coffee is your friend!!!!! Froze

Aussie Grass-Fed Braised Beef Rolled Tacos

These rolled tacos were one of he first things I learned to cook as an adult. I lived with a Hispanic family right out of high school. They spoke very little English, swore in Spanish A LOT, and cooked some really delicious food. I picked up on the swearing and the cooking, so with a little time and practice, I got pretty good at both! Usually this beef will cook in the crock pot for hours, and you can certainly do it that way, but for a quicker dinner, I used the Instant Pot and got a very similar result. The key to making the seasoning easy on this is using the fresh salsa. Get the blended stuff from the refrigerated case in the grocery store (I use Fresh Homestyle Salsa by El Sol). You
